Gazpacho

Here's a refreshing gazpacho recipe:

Ingredients:

  • 6 ripe tomatoes, chopped
  • 1 cucumber, peeled and diced
  • 1 bell pepper (red or green), chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 3 cups tomato juice (or vegetable broth)
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar (or to taste)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Blend the Vegetables: In a blender, combine the chopped tomatoes, cucumber, bell pepper, red onion, and garlic. Blend until smooth (or leave it slightly chunky if you prefer).

  2. Add Liquid Ingredients: Pour in the tomato juice (or broth), olive oil, and red wine vinegar. Blend again until combined.

  3. Season: Add salt and pepper to taste. Adjust the acidity with more vinegar if desired.

  4. Chill: Transfer the gazpacho to a bowl or pitcher and refrigerate for at least 2 hours to allow the flavors to meld.

  5. Serve: Stir the gazpacho before serving. Ladle it into bowls and garnish with fresh herbs if you like.
